Gluten-Free Gingerbread Cake Recipe

This cake is uniquely delicious since the heat of the ginger balances out the sweeter flavors, leaving you with an exciting and light taste.
After a lot of experimentation, this gingerbread cake was finally perfected.
I must give special thanks to Randy, my partner at Real Food For Life, for helping me “test” the final cake creation.

He readily agreed… Well, actually, he begged to be part of the “testing process,” and even bravely suggested we try seconds and thirds just be sure.“ He then creatively suggested that it would be “wise” to repeat the whole process the next day:)

Any dessert with ginger is good but this one is amazing!
Ingredients:
3/4 cup coconut oil
1/2 cup rice syrup
1/4 cup black strap molasses
1/4 cup water
1/4 – 1/3 cup fresh ginger, grated
1 cup brown rice flour
1/2 cup potato flour
1/2 cup flax meal
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. stevia
1/2 tsp. salt

Directions:
1.    Combine coconut oil, rice syrup, molasses, flax meal and ginger in a bowl.
2.    Combine flour, baking powder, cinnamon and salt in a separate bowl.
3.    Stir half of the flour mixture into the wet mixture.
4.    Mix well.
5.    Add water.
6.    When mixed well, stir in the remaining dry ingredients.
7.    Pour into an oiled, floured 8 inch square pan.
8.    Bake at 400º F. for 35 to 45 minutes.
9.    Serve with applesauce.

Sugar Free Apple Sauce (to top the cake)

I love sweets! I know that many others do too.
To help with those sugar cravings in a healthy way, we need to prepare nutritious sweets. I have created lots of sugar free recipes and here is one of my favorites.

Of course it’s more nutritious to eat the fruit raw, but sometimes we are looking for that comfort food that is sweet and hot.
This is a good fruit sauce without ANY added sugar. It is great on top of cakes like the above.
Ingredients:
2 cups apples
½ cup water
1 tsp. cinnamon

Directions:

1. Core and slice apples.
2. Place all ingredients in a pot.
3. Bring to a boil.
4. Simmer until fruit is soft.


Option:  
You can add 1/2 cup raisins.
